The most famous food in Datong is noodle soup.  Local people put wheat, pea, buckwheat, soybean sprout, tofu and peanut into boiling cooking pot, add vinegar together, and this type of noodle soup will be their main dish, 3 times everyday.  People never get tire of foods made of noodle, and I was told that there are more than 100 kind of different noodle soups, with dozens of different seasoning.

The most famous Datong Noodle Restaurant is near the city hall, next to the Jiahe Express Hostel.  It is a small and shaddy restaurant, usually no foreigners have their meals in this type of place.  If you trust me, I can tell you that the food here will be better than your RMB 100 buffet breakast in the hotel you stayed!  The talbe is clean, and staffs in the restaurant are quite friendly.

When they serve the noodle, the restaurant owner will also bring a big scoop with water to your table.  It is not water anyway, it is pure noodble soup, and people like to drink this type of soup after the meal.  You will have to drink the soup by the big scoop.  Do not be surprise, just do it like other Chinese people do.
